As we move through the fourth quarter of 2011, we would again like to thank you for your support. It’s been a good year for Wystone’s World Teas, and we have accomplished some important objectives.

 

Fist of all, we are still here. Maybe that’s not the way to start our message but, as you know, the economy hasn’t been kind to many businesses. We are still here because you believe in us. You tell us the good and the bad and you know we take your feedback to heart. Service is of the utmost importance and we have a new member of our team, a seasoned General Manager, Damian Matecjuk , who was recently the Director of Food & Beverage for the Sheraton Denver West. We are so fortunate to have someone with his skills and talents, who has the customer service mindset we believe in – and that you so dearly deserve. Please say hello to Damian on your next visit. He is with us to ensure you are delighted with our service.

 

If you haven’t been in for a while, Chef Mark has developed a great fall menu. There are already some new fan favorites. Try the new Muffaleta Panini or one of the new Scramblers. By popular demand we have also added a Formal High Tea Tray for your very special occasions and our Award winning Apple Chai Cider is back!

 

We have completed our world-wide sourcing for new and unusual teapots and accessories, so come in and see the new product lines. They have arrived just in time for the holidays so begin your shopping early.

 

We celebrated the grand opening of our first gift cart at Denver International Airport. Please visit us on Concourse A when your travels permit.

 

We also have a new product that will be sold at the airport and at our Belmar location, available November 15, called the Travel ParTea Snack Set, which includes our premium loose-leaf teas, tea cookies, and artisan gourmet tea chocolates to enjoy in-flight (or anywhere, really). recipeofthemonthRecipe of the Month:  Matcha Cake

This cake’s very important ingredient is Matcha tea, a tea made from ground tencha leaves and has historically been used in Japanese tea ceremonies.  This recipe also uses a steeped Sencha tea as the liquid.

 

¾ ounce Premium grade Wystone’s Matcha

5 ounces of fine sugar

2 rounded tablespoons of Sencha tea steeped in 10 ounces of hot water- bring to room temperature

3 ½ ounces of butter softened at room temperature

3 medium eggs

3 ounces of wheat flour

1 ½ ounces of chestnut flour

1 teaspoon of baking powder

1 pinch of salt

 

Preheat the oven to 410 F/ 210 C.

Sieve the Matcha; mix it with sugar.  Set aside.

Infuse the Sencha tea in a small 10 fluid-ounce teapot; once it has cooled down to room temperature, pour over sweetened Matcha; mix together to obtain a rather thick mixture; which is not too watery.

Add the butter and the beaten eggs.

Mix together the two types of flour and the baking powder, and combine them into the Matcha mixture by folding in with a spatula.

Add the salt.

Pour the mixture into a 10-inch cake pan, which has been lined with wax paper.  Place the pan in the oven and cook for 1 hour at 300 F/ 150 C.

Cover with aluminum foil toward the end of the cooking time so that the cake retains its very attractive green color.

Serve with jam, apple butter or wonderful with strawberries and blueberries and fresh whipped cream.

productProduct of the Month:  Yixing Tea Potyixings

It is said that if you use a Yixing teapot for many years, you can brew tea just by pouring boiling water into the empty pot – one of the many wonderful properties of these poetic little teapots.
For hundreds of years, aficionados of the many varieties of tea found in China have extolled Yixing (pronounced yeeshing) teapots as superior to all other types for brewing it. The special zisha clay (containing iron, quartz and mica, and found only in Yixing) fromwhich they are made absorbs the delicate flavors of the tea and the teapot becomes more seasoned with each use.

Yixing pots are available for purchase at Wystone’s in Belmar or at the airport at our kiosk on Concourse A.

Table for One, Please!
