Recipe of the Month

Tea Smoked Cornish Hens

Wash and pat bird dry.

Stuff cavity with a lemon wedge, thyme and garlic.

Brush with extra virgin olive oil and season with Wystone’s Lapsang Souchong Tea Rub.

Place bird on a small oven rack or casserole dish and roast for about 45 minutes at 350 until the internal temperature is 165 and the juices run clear.

Let the bird rest for at least 10 minutes. Remove cavity contents before cutting in half to serve.

One bird per person as prepared.

As we move through the fourth quarter of 2011, we would again like to thank you for your support. It’s been a good year for Wystone’s World Teas, and we have accomplished some important objectives.

Fist of all, we are still here. Maybe that’s not the way to start our message but, as you know, the economy hasn’t been kind to many businesses. We are still here because you believe in us. You tell us the good and the bad and you know we take your feedback to heart. Service is of the utmost importance and we have a new member of our team, a seasoned General Manager, Damian Matecjuk , who was recently the Director of Food & Beverage for the Sheraton Denver West. We are so fortunate to have someone with his skills and talents, who has the customer service mindset we believe in – and that you so dearly deserve. Please say hello to Damian on your next visit. He is with us to ensure you are delighted with our service.

If you haven’t been in for a while, Chef Mark has developed a great fall menu. There are already some new fan favorites. Try the new Muffaleta Panini or one of the new Scramblers. Recipe of the Month: Matcha Cake

This cake’s very important ingredient is Matcha tea, a tea made from ground tencha leaves and has historically been used in Japanese tea ceremonies. This recipe also uses a steeped Sencha tea as the liquid.

¾ ounce Premium grade Wystone’s Matcha

5 ounces of fine sugar

2 rounded tablespoons of Sencha tea steeped in 10 ounces of hot water- bring to room temperature

3 ½ ounces of butter softened at room temperature

3 medium eggs

3 ounces of wheat flour

1 ½ ounces of chestnut flour

1 teaspoon of baking powder

1 pinch of salt

Preheat the oven to 410 F/ 210 C.

Sieve the Matcha; mix it with sugar. Set aside.

Infuse the Sencha tea in a small 10 fluid-ounce teapot; once it has cooled down to room temperature, pour over sweetened Matcha; mix together to obtain a rather thick mixture; which is not too watery.

Add the butter and the beaten eggs.

Mix together the two types of flour and the baking powder, and combine them into the Matcha mixture by folding in with a spatula.

Add the salt.

Pour the mixture into a 10-inch cake pan, which has been lined with wax paper. Place the pan in the oven and cook for 1 hour at 300 F/ 150 C.

Cover with aluminum foil toward the end of the cooking time so that the cake retains its very attractive green color.

Serve with jam, apple butter or wonderful with strawberries and blueberries and fresh whipped cream.

Product of the Month: Yixing Tea Pots

It is said that if you use a Yixing teapot for many years, you can brew tea just by pouring boiling water into the empty pot – one of the many wonderful properties of these poetic little teapots.

For hundreds of years, aficionados of the many varieties of tea found in China have extolled Yixing (pronounced yeeshing) teapots as superior to all other types for brewing it. The special zisha clay (containing iron, quartz and mica, and found only in Yixing) fromwhich they are made absorbs the delicate flavors of the tea and the teapot becomes more seasoned with each use.

Yixing pots are available for purchase at Wystone’s in Belmar or at the airport at our kiosk on Concourse A.

Dear Readers,

Thank you for your overwhelming concern for our colleagues in Japan. As many of you know, I traveled to Japan a few years ago to see the tea estates up-close and personal. That trip changed me professionally and solidified my commitment to get into the tea business. I saw first-hand the quality product being produced, the pride the Japanese people have for this thousands year-old plant and the way tea is a part of their culture from sunrise to sunset.

Clearly our hearts and thoughts are with the Japanese people as we “embrace this pain.” To try to determine the overall impact to tea production would be, at this point, premature, but it’s important to know that most teas destined for world markets are already warehoused and have been for quite some time. Tea has a tremendous shelf life if kept in airtight conditions and away from direct sunlight.

What we do know about the impact to the area and specifically the issues surrounding the nuclear reactors, we have inserted a paraphrased article from World Tea News.

According to World Tea News Editor, Dan Bolton, Massachusetts has seen low-level radioactive particles, carried by the jet stream, as of last Sunday. Radiation levels at the gate of the severely damaged Fukushima Daiichi plant remain high but rapidly drop to a few microsieverts moving away from the plant. To become ill, a person has to be exposed to a dose of about 1 Sievert which is a million times more than the microsieverts detected. REM (Roentgen Equivalent Mammal) measures the impact of ionized radiation exposure in mammals. Mammals become ill at an exposure of 100 REM. An exposure of 500 REM causes death in 50 percent of cases.

The highest concentrations of radioactivity are in the surrounding areas of the damaged reactors at Fukushima. U.S. military flyovers and ground-based inspectors from the International Atomic Energy Agency showed concentrations that are tens of thousands of times below the threshold that would make individuals sick and the plume depicted in news reports is millions of times below harmful levels.

Wystone’s World Teas has large stockpiles of premium Japanese teas, so your favorites such as Matcha, Jasmine Pearls and Premium grade Gyokura and Sencha are still available. We will keep you posted via this Newsletter and special information blogs as the news develops.

Remember we have over 150 varieties of tea from around the world. We are diversified in our ability to source globally and to have teas from literally every corner of the planet.

First flush Darjeelings from India will be in next month and, if you’ve never tasted a first flush, we will be having a special tea-tasting upon their arrival. Just a note…there has been a bit of drama over these teas. The harvest was being held hostage by the Darjeeling Terai Dooars Plantation Labor Union for better wages on the estates. As of Friday the dispute was resolved in the workers’ favor. It is important for us to support these activities as the workers were asking for their pay to be doubled to $2.01 per day. Our purchase of these teas helps support the livelihoods of the workers and their families. As you read this, someone, somewhere is hand-picking a specialty tea!

Finally, Wystone’s World Teas will partner with a humanitarian aid organization later this month for fundraiser similar to our activities following the Haitian disaster. For those of you who participated, you know what a special evening of giving it was. Please look for our invitation in the next couple of weeks.

Wise Tea of the Month: Rooibos

Recipe of the Month: Grilled Moroccan Mint Lamb Chops

Ingredients

Serves 4

1 ½ cup of water

2 teaspoons of Wystone’s Moroccan Mint Tea

Juice of 1 lemon

3 Tablespoons of olive oil

8 lamb chops- the small ones

1 small red onion

1 clove of garlic chopped (optional)

2 tablespoons of Agave nectar

Salt and pepper to taste

Sprig of fresh mint

Preparation:

1. Steep the Moroccan Mint Tea in water that has come to a boil and sat for 1-2 minutes. Steep it for 3-5 minutes using your Tea Maker or use Tea Sacs(bags) which you make yourself. That’s the beauty of loose leaf specialty tea.

2. Line your shallow dish with the lamb chops, coat with olive oil and chopped garlic and season them with salt and pepper. Pour tea over the chops and squeeze lemon juice on last. Cover and let marinade 2-4 hours or overnight.

3. Either put the chops on a hot grill for 10-15 minutes, depending on thickness, rotating at least once or sear the chops in a lightly olive oil coated skillet for about 3 minutes each side and the transfer to a 350 degree oven for about 10 more minutes.

4. Plate your chops and with the juices from the pan, sautee the onions for about 4 minutes. Add the agave nectar and pour over chops.

5. You can garnish the plate with the fresh mint or chop it and sprinkle over the chops.

Happy July everyone!

Life is good and again we move forward in this world doing the best that any of us can. We are so grateful for all of you and your patronage. I’d like to devote this month’s issue to Non-Profit work. It is vitally important that we, as citizens of this universe, support those endeavors of our non-profits. We have the distinct pleasure of working with many organizations because we sponsor Benefit Brews; non-profit fundraisers whereby the non-profit earns 25% of gross revenues during the time period their organization is hosting a party at the café. To say this has been a success is an understatement. How heartfelt it is to see organizations like the Misha May Foundation, Dolls for Daughters, MADD- Mothers Against Drunk Driving, Alzheimer’s Association, American Heart Association, Colorado Heritage Camp for Adoptive Families, Girl Scouts, Center for the Blind, SPIN, and numerous high schools and other organizations too numerous to name.

What an honor to help these types of institutions in a time when monies are short or non-existent. I ask all of you to support these organizations as they pick up the missing pieces of so many lives and their work is so important to the fabric of the community. I call on other businesses to support these works as well, as only through our sense of community will we thrive.

Recipe of the Month: Grilled Pear Salad with African Rooibos Dressing

By popular demand- our best selling salad in the café. Enjoy!

(serves 8)

24 oz. field greens

6 – 8 grilled pear halves quartered

4 cups dried cranberries

1 cup grated parmesan cheese

1 cup dressing

candied pecans or walnuts* purchase or see recipe below to make your own

Grilled pears

Use canned halved pears, drain the pears from their juice, coat lightly with extra virgin olive oil and place on stovetop or outdoor grill. The sugar in the pears will help caramelize them. Set them aside while you make the dressing and set up all your other ingredients.

Honey Spice Rooibos Dressing

1 Tbs. Roast Garlic
1 Tbs. Mustard
4 Oz. Agave
1 Oz. Lemon juice
Pinch. Salt
2 Ea. Egg yolks
1 Cup Oil
1 Tbs. Honey Spice Rooibos Tea
4 Oz. Hot Water/ as needed

1.Combine garlic, mustard, agave, lemon juice, salt and egg yolks in blender and puree until smooth.
2.With the machine running slowly add oil
3.Steep tea in hot water for 5 minutes and add both the Rooibos tea and tea leaves to dressing.

Use any lettuce leaves. We prefer a Spring Mix. To the greens add the grilled pears, candied pecans or walnuts, dried cranberries and Parmesan cheese in a large bowl. Pour dressing on top and toss so everything is coated.

Plate and garnish with grilled pears on top, dried cranberries, Pecans or Walnuts and grated Parmesan.

Candied Walnuts or Pecans

8 Cup Walnuts
1 Cup Agave Nectar
1 Cup Water
1 Cup Sugar
1 Tsp. Salt
1 Tsp. Cayenne pepper
1 Tsp. White pepper
½ Tsp. Cumin
½ Tsp. Cinnamon

Bring a large pot of water to a rolling boil. Add Walnuts and cook for 5 minutes, drain and rinse to remove shell parts.

Add walnuts back into the pot and add, water, agave, sugar and spices. Reduce this until dry.

Spread the walnuts onto a greased sheet pan and bake at 300 degrees until crisp and brown, (around 10-15 minutes) stir often.

The Walnuts or Pecans can be made well in advance to have all the time for different recipes. Store in an airtight container.

Dear Readers,

June 14th marks our third birthday, and we couldn’t have come this far without you! It is hard to believe that we have been open for 1,095 days. I must admit, it has been challenging; we opened our doors only four months before the worst economic disaster since the Great Depression struck the world. There were many nights I thought that I must have the worst timing on the planet. It was bad enough that our customers were really impacted by these events, but food prices escalated, the rest of the stores that were due to open in Belmar were significantly delayed and – on top of that – we were at the undeveloped part of Belmar.

Now let’s fast forward…we increased our space – thanks to the management at Belmar! We increased our menu offerings, started doing a lot more events and parties and we expanded our tea choices. The economy has cooperated enough so that now Target, Nordstrom Rack and Best Buy are all within steps of our cafe and we will now be building on the business we expected to have three years ago.

We’ve learned a lot about ourselves, customer service and client appreciation. Many businesses around the country, especially restaurants, have opened and closed during the three years we’ve been in business. We know our ability to keep our doors open is because of you. We do not take our customers for granted, and when we make a mistake, please know we not only want to prevent it from happening again, but we want to make it right immediately. Always let us know if we can do anything for you or your family and friends to make your time with us more enjoyable. We are dedicated to succeeding in bringing a tea brand to market that stands for quality tea and food, fun and spirit.

Thank you for helping us make it these three years. We look forward to serving you for many more. And did I mention we’re celebrating? Check out our June events for details.

Recipe of the Month: Cinnamon Vanilla Tea Nut Brittle

1/2 cup of light corn syrup
3/4 cups of sugar

1 1/2 cups of walnuts, peanuts or any nut coarsely chopped

1/4 teaspoon of salt

2 teaspoons of any black tea with 1/4 teaspoon of cinnamon

1 Tablespoon of butter

1 1/2 teaspoons of vanilla

1 teaspoon of baking soda

Combine the corn syrup and sugar in a large glass bowl and stir until combined. Then either put in a boiler pan until heated and glassy or leave in the glass bowl and put in the microwave for 2-3 minutes.

After the mixture is heated by either method, stir in nuts and salt and heat for about 25 more minutes.

Stir in Tea and butter and then stir in vanilla and baking soda and heat one more time for about 3-5 minutes until mixed thoroughly.

When mixture is combined, pour onto parchment lined cookie sheet.

Spread the mixture into a thin layer and wait for it to cool.

You can break it into whatever size you desire. This is great for parties and snacks.

Tea of the Month: OP Jasmine

In China, whole green leaf teas are traditionally scented with Jasmine flowers placed in layers within. The petals are harvested during the day and stored cool at night in order to bloom and enfold their full fragrance. According to the desired quality grades the petals are re-shifted after processing. For this reason teas vary from light to stronger delicate floral flavors and tastes.

Dear Readers,

It’s May already. Where has the year gone? Time seems to have warped us into summer - I swear I was just watching the Super Bowl.

As we move through this year, how many of our resolutions have we kept? Are we taking care of ourselves? Are we remaining (or getting) fit and watching what we eat? Are we spending more time with our families and loved ones like we said we would? If the answer to any of those questions is no, then guess what? Today is a new day. You get a Do-over. Don’t lament on what didn’t get done. Just move forward.

What on earth does any of this have to do with tea? Everything. Having a good cup is a perfect time to slow down, reflect and regroup. Many of you have used tea as a way to health and nutrition. Many of you have used tea as a way to connect with family and friends. One of you even came in last month and showed me your 25-pound weight loss. JB…you know who you are!

JB’s story is remarkable, and she told me how she did it with tea. She had been struggling with her weight for years. She wanted to lose 25 pounds and had tried everything. She came into Wystone’s in January (after making one of those aforementioned resolutions) and said she was tired of dieting. I asked her about her eating habits and was surprised to find out that she really was eating healthy foods and she seemed very fit. She said to me, “I just don’t understand why I can’t lose weight.” I asked her what she drank during the day and this was her actual regimen:

6:30 am- Water

7:30 am- Coffee Latte

9:00 am- Fruit Smoothie

10:30 am- Water

11:00 am- Diet Coke

12:00 pm- Bottled Fruit Juice

2:00 pm- Carton of Milk

3:00 pm- Water

5:00 pm- Fruit Smoothie

6:30 pm- Glass of wine with dinner

7:30 pm- Water

9:00 pm- Glass of Orange juice

We tallied up the numbers and found that, on any given day, she consumed between 700-1,000 calories – in beverages alone! We discussed how to incorporate tea into her daily life, since it’s equally satisfying at a fraction of the calories. We decided to shave off half the daily liquid calories for starters, and her results have been remarkable.

We often think that drinks are “free” calories. I’d love to tell you that’s true, but it’s just not. Fortunately, many teas are low-calorie and so flavorful that they need nothing added. So, whether you visit Wystone’s or buy your favorite brand in the grocery store, tea is a healthy alternative for any lifestyle. There are thousands of teas just waiting for you. If your thing is chocolate, we have a tea for you. You want energy, try Yerba Mate. You want calm and serenity, try lavender and chamomile. Need a morning pick-me-up? Try our Café Latte with whole Espresso coffee beans in the tea, or try Pu’Erh…aged Chinese tea for a real eye-opening experience.

Recipe of the Month: Coconut Matcha Loaf Cake

Ingredients

1/2 cup butter, softened

2/3 cup sugar

2 large eggs

1/2 cup coconut milk

1/4 cup cups coconut flakes

1 cup of flour

1 heaping tablespoon of Matcha green tea

1 teaspoon baking powder

3 tablespoons of chocolate or butterscotch chips

Directions:

Preheat oven to 325 degrees. Line a loaf pan size (8 1/2 x 4 1/2 x 2 1/2) with parchment paper

Cream the butter and sugar together. Then add the eggs, coconut milk and flakes, then mix until well combined

In another bowl, sift together the flour, Matcha and baking powder

Add the flour mixture to the egg mixture and blend until smooth. Stir in the chips and then pour into the pan and bake 35-45 minutes. It should be golden brown on top.

Let the delicious cake cool in the pan before removing or slicing. It’s great with a cup of your favorite tea.

Happy March everyone.   I can’t believe it’s already the last month of the quarter, but with the passing of the seasons comes some exciting new events. As many of you faithful Wystonians know, we signed our lease in late 2007. We selected the site for our tea restaurant at the underdeveloped end of Alaska Drive in Belmar, where plans were underway to build new stores on the empty lots across the street and at the corner of Vance and Alaska. Based on those tentative plans to be surrounded by other flourishing businesses, we started construction.  We opened our doors in June 2008, and even gained a few retail neighbors as our own business grew. Then came October 2008, and with it the world economy changed, sending us all into the worst economic climate since the Great Depression. No retail neighbors came after that – but you certainly did – and three years later we have survived.   Thank you for your continued loyalty and patronage. Were it not for you and your acceptance of us into the neighborhood, we wouldn’t be here. Thank you for becoming part of our family.

And guess what? Those new neighbors we hoped for? They’re finally moving in. Both Target and Best Buy open this month, with Nordstrom Rack opening shortly thereafter. Wise Tea of the Month: Rooibos

Recipe of the Month: Tea-Ramisu

A unique tea twist on the classic Italian dessert known for its layered sponge cake, coffee and liquer. From the best-in-the-world gourmet cookbook – A Touch of Rooibos, which is available at Wystone’s World Teas and for which we were contributing cooking professionals.

½ cup of strong Rooibos…use either Caramel or Tiramisu Rooibos for extra flavor ½ cup Brandy (optional- If you don’t use Brandy increase the amount of Rooibos) 3 tsp of honey 1 package of ladyfinger cookies about 6 ounces 3 large eggs, separated 2 ½ tbsp finely granulated sugar 9 ounces of mascarpone cheese 3 ½ tbsp crushed pralines or brittle

Serves 4 – 6

1.   Mix the Rooibos, brandy (or extra Rooibos) and honey together in a small shallow bowl.
2.   Dip both sides of the cookies into the liquid and arrange half of the cookies in the bottom of a shallow dish, covering the base. Pour half of the leftover liquid over the cookies.
3.   Dream the egg yolks and sugar together until thick and pale. Add the mascarpone cheese to the egg mixture until smooth.
4.   Beat the egg whites until stiff and fold into the mascarpone mixture.
5.   Pour half of the mixture over the cookies in the dish. Arrange the rest of the dipped cookies on top. Pour the rest of the Rooibos and honey mixture over the cookies.
6.   Pour the remaining mascarpone cheese over the top. Sprinkle the praline or brittle mixture on top.
7.   Place in the refrigerator for at least 4 – 6 hours to set.
8.   Enjoy!
